Rice & Dough Water Calculator

Work out how much water to add for rice, or how much water a dough needs by flour weight and food type

One standard rice cup holds about 150 g of raw rice.

Water absorption varies with rice age, brand and altitude, and with flour protein. Start with the suggested amount, then adjust by a spoonful next time. Rice cooker lines are only a rough guide.

Frequently asked questions

Why does brown rice need more water than white rice?

Brown rice keeps its bran layer, which slows water absorption, so it usually needs around 1.5 times its weight in water and a slightly longer cooking time.

How do I measure rice without a cup?

A standard rice cup is about 150 g of raw rice. If you only have a kitchen scale, weigh the rice and choose grams; the water amount is calculated from the weight.

What does dough hydration mean?

Hydration is the water weight divided by the flour weight. Bread dough is usually around 65%, steamed buns about 55%, dumpling wrappers about 45% and noodle dough about 40%.
